This week the WordPress weekly photo challenge is from above. So I think I will present you with a recipe this week along with my photo.
Apple Almond Muffin: Vegan and Paleo
These are the ingredients that you need pictured, I was looking down at them from above.
Apple Almond Muffins:
3 cored apples, Steamed until soft (I cooked them in a bowl with a few tablespoons of water and covered with another bowl in the microwave on the fresh veggie setting)
6 Large Medjool Dates, pitted
3 Tablespoons Ground Flax Seed & 6 Tablespoon Boiled Water
1 Cup unsalted smooth almond butter
1 Tablespoon vanilla extract (I use a kind with no alcohol)
A pinch of salt
1/2 teaspoon baking soda
1/2 teaspoon cider vinegar
Yummy add in options: 1/2 teaspoon cinnamon, chopped nuts, berries, 1/4 cup unsweetened chocolate powder, a few chocolate chips…you get the idea, this is a great base for just about anything.
I use an immersion blender for mixing these all together, you could probably use a food processor instead.
Preheat the oven to 350 degrees and line muffin tin with cupcake liners (12).
So in a large container add the flax seed, boiling water, and dates. Allow those to sit for a few minutes then add the vanilla and blend until these are all smooth. Next add in the almond butter, salt, cooked apples, baking soda, and vinegar and blend until completely smooth. If you are adding anything in this is the time to do it most things could just be gently folded in, but if you are doing chocolate powder I recommend stirring or using the mixer.
Pour the batter into cupcake liner until about 1/3 full. Bake for 20 minutes.
